For latte art, an espresso machine with a steam wand is useful, although a separate milk frother can provide a simpler starting point for people who do not make espresso at home. A small stainless-steel milk pitcher is worth having because its narrow spout gives much better control when pouring patterns. Start with cold milk and a cold pitcher, leaving enough empty space for the milk to expand. Fresh homogenised dairy milk is usually forgiving for early practice. Many oat, soya and other plant-based drinks can also produce workable foam, particularly versions formulated for coffee, although their behaviour differs between brands and they may require slightly different aeration.
Milk texturing can be thought of as a two-stage process. At the beginning, keep the steam-wand tip close to the surface so that a controlled amount of air enters the milk. The sound should be gentle rather than violent, and the volume should increase gradually rather than forming a cap of large bubbles. Once enough air has been incorporated, move the wand slightly deeper and continue heating while keeping the milk moving. The aim is a smooth, integrated texture that resembles wet paint when the pitcher is swirled. Training material for baristas commonly uses an increase of roughly one-third in milk volume as a useful target for latte-art microfoam, although beginners can adjust this as they become familiar with their equipment.
Temperature matters both for comfort and flavour. Milk drinks are commonly pleasant to serve at approximately 55–60°C, while overheating can make the drink less enjoyable and reduce the time available for controlled pouring. A simple tulip uses the same skills but adds repetition. Instead of creating one large white circle, make several smaller pushes of foam, moving the pitcher slightly backwards after each one. Finish by lifting the pitcher and drawing a thin stream through the stacked shapes. The pattern may look uneven for many attempts, and that is useful information. A design that disappears beneath the surface usually means the pitcher remained too high. A thick white blob that refuses to move often points to overly foamy milk. Weak contrast can come from pouring too slowly or waiting so long after steaming that the milk has begun separating in the pitcher.
Progress becomes easier when each practice session has one goal. Spend one session concentrating on milk texture, another on controlling pouring height and another on producing a symmetrical heart. Hand movements can even be rehearsed with water before using coffee and milk, although water cannot reproduce the behaviour of real microfoam.
